Kambu Murukku

Kambu Murukku is a crispy, savoury snack made with Kambu (Pearl Millet) flour. It’s a healthier alternative to traditional rice flour murukku, perfect for tea time or as a snack.   
Ingredients:

  • 1 cup Kambu flour (Pearl Millet flour)
  • 1/4 cup rice flour
  •  2 tbsp chickpea flour (besan)
  • 1/2 tsp ajwain (carom seeds)
  • 1/2 tsp cumin seeds (optional)
  • 1/4 tsp asafoetida (hing) (optional)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp turmeric powder (optional, for colour)
  • 1 tbsp hot oil (for the dough)
  • Water (as needed)
  • Oil for frying                                

Instructions:

  • Mix dough: Combine Kambu flour, rice flour, chickpea flour, ajwain, cumin, asafoetida, salt, and turmeric. Add 1 tbsp hot oil, then knead in water to form a stiff dough.
  • Shape: Fill dough into murukku maker and shape into spirals in hot oil.
  • Fry: Fry on medium heat until golden and crispy (3-4 mins). Drain on paper towels.
  • Serve: Cool and serve.

  • Proper dough consistency: Ensure the dough is firm and smooth. If the dough is too soft, the murukku will break apart while frying.

  • Add spices: Feel free to add additional spices like black pepper, garam masala, or coriander powder to customize the flavor according to your taste.
