Kambu Murukku

Kambu Murukku is a crispy, savoury snack made with Kambu (Pearl Millet) flour. It’s a healthier alternative to traditional rice flour murukku, perfect for tea time or as a snack.
Ingredients:
- 1 cup Kambu flour (Pearl Millet flour)
- 1/4 cup rice flour
- 2 tbsp chickpea flour (besan)
- 1/2 tsp ajwain (carom seeds)
- 1/2 tsp cumin seeds (optional)
- 1/4 tsp asafoetida (hing) (optional)
- 1 tsp salt (adjust to taste)
- 1/2 tsp turmeric powder (optional, for colour)
- 1 tbsp hot oil (for the dough)
- Water (as needed)
- Oil for frying
Instructions:
- Mix dough: Combine Kambu flour, rice flour, chickpea flour, ajwain, cumin, asafoetida, salt, and turmeric. Add 1 tbsp hot oil, then knead in water to form a stiff dough.
- Shape: Fill dough into murukku maker and shape into spirals in hot oil.
- Fry: Fry on medium heat until golden and crispy (3-4 mins). Drain on paper towels.
- Serve: Cool and serve.

- Proper dough consistency: Ensure the dough is firm and smooth. If the dough is too soft, the murukku will break apart while frying.

- Add spices: Feel free to add additional spices like black pepper, garam masala, or coriander powder to customize the flavor according to your taste.
- Crispier Murukku: You can add hot oil to the dough mixture. This helps in making the murukku crispier.
