Nattu Kambu Thattai is a crispy, crunchy South Indian snack made with pearl millet (nattu kambu), rice flour, and a blend of spices. It’s a healthy and delicious alternative to traditional rice flour-based thattai, perfect for festive occasions or tea-time snacks.
Here's a simple recipe for Nattu Kambu Thattai:
Ingredients:
- 1/2 cup Nattu Kambu (pearl millet) flour
- 1/2 cup Rice flour
- 2 tbsp Gram flour (Besan)
- 1-2 tbsp Sesame seeds (optional)
- 1-2 tbsp Butter or ghee (melted)
- 1/2 tsp Cumin seeds
- 1/2 tsp Black sesame seeds (optional)
- 1/2 tsp Red chili powder
- 1/4 tsp Asafoetida (hing)
- 1/4 tsp Salt (adjust to taste)
- Water (as needed to make dough)
- Oil for deep frying
Instruction:
- Make Dough: Mix nattu kambu flour, rice flour, gram flour, spices, and melted butter. Add water to form a firm dough.
- Shape Thattai: Roll dough into balls, flatten into thin discs (3-4 inches), and make small holes in the centre.
- Fry: Heat oil in a pan. Fry the discs on medium heat until golden and crisp (2-3 mins per side).
- Cool & Serve: Drain on paper towels, let cool, and serve.

Tips:
- You can add black sesame seeds or carom seeds (ajwain) for an extra flavour boost.
- For variation, you can also add curry leaves or ginger to the dough.
- Ensure the oil is at the right temperature (medium heat) for frying; if the oil is too hot, the Thattai will burn on the outside while remaining raw inside.
