Kambu Idiyappam

Kambu Idiyappam

Kambu (Pearl Millet) Idiyappam is a delicious, gluten-free alternative to the traditional rice idiyappam. It's soft, light, and perfect with coconut milk or curry.  
Ingredients:

  • 1 cup Kambu (Pearl Millet) flour
  • 1-1.5 cups hot water
  • 1/2 tsp salt
  • 1 tbsp oil (optional)
  • Coconut milk or vegetable curry for serving                                              

    Instructions:

  • Boil water: Boil 1.5 cups water with salt and oil (optional).
  • Make dough: Gradually mix hot water into Kambu flour to form a soft dough. Rest for 10-15 mins.
  • Shape idiyappams: Grease idiyappam maker, fill with dough, and press onto steaming plates in a spiral shape.
  • Steam: Steam idiyappams for 8-10 minutes until soft.
  • Serve: Serve with coconut milk or vegetable curry.

Tips:

  • If you don't have an idiyappam maker, you can use a piping bag or a thick cloth to squeeze the dough into noodles.
  • You can make a large batch of dough and steam the idiyappams in batches.
