Kambu Idiyappam

Kambu (Pearl Millet) Idiyappam is a delicious, gluten-free alternative to the traditional rice idiyappam. It's soft, light, and perfect with coconut milk or curry.
Ingredients:
- 1 cup Kambu (Pearl Millet) flour
- 1-1.5 cups hot water
- 1/2 tsp salt
- 1 tbsp oil (optional)
- Coconut milk or vegetable curry for serving
Instructions:
- Boil water: Boil 1.5 cups water with salt and oil (optional).
- Make dough: Gradually mix hot water into Kambu flour to form a soft dough. Rest for 10-15 mins.
- Shape idiyappams: Grease idiyappam maker, fill with dough, and press onto steaming plates in a spiral shape.
- Steam: Steam idiyappams for 8-10 minutes until soft.
- Serve: Serve with coconut milk or vegetable curry.

Tips:
- If you don't have an idiyappam maker, you can use a piping bag or a thick cloth to squeeze the dough into noodles.
- You can make a large batch of dough and steam the idiyappams in batches.
