Samba Rava Upma

Samba Rava Upma is a popular South Indian breakfast dish made from Samba Rava (a coarse variety of semolina). It's nutritious, savoury, and easy to prepare. Here’s a detailed procedure to make Samba Rava Upma:

Ingredients:

  • Samba Rava (coarse semolina) – 1 cup
  • Oil – 2 tbsp (preferably coconut oil or vegetable oil)
  • Mustard seeds – 1 tsp
  • Urad dal (split black gram) – 1 tsp
  • Chana dal (split chickpeas) – 1 tsp
  • Dried red chilies – 2
  • Curry leaves – 8-10
  • Green chilies – 2 (slit or chopped)
  • Ginger – 1-inch piece (finely chopped)
  • Onion – 1 small (finely chopped)
  • Tomato – 1 medium (chopped, optional)
  • Carrot – 1 small (grated or finely chopped, optional)
  • Beans – 1/4 cup (finely chopped, optional)
  • Salt – to taste
  • Water – 2 1/2 cups (for softer upma, use 2 1/4 cups)
  • Lemon juice – 1 tsp (optional)
  • Coriander leaves – for garnish (optional)

Roast Samba Rava: Dry roast 1 cup of Samba Rava in a pan for 3-4 minutes until golden and aromatic. Set aside.

  • Tempering: Heat 2 tbsp oil, add 1 tsp mustard seeds, 1 tsp urad dal, 1 tsp chana dal. Sauté until golden. Add 2 dried red chilies, 8-10 curry leaves, 2 green chilies, and 1-inch chopped ginger. Sauté for a minute.
  • Cook Vegetables: Add 1 chopped onion, 1 chopped tomato, grated carrot, and chopped beans (optional). Sauté until softened.
  • Boil Water: Add 2 1/2 cups water, salt to taste, and bring to a boil.
  • Add Rava: Slowly add the roasted Samba Rava to the boiling water, stirring constantly. Cover and cook on low heat for 3-4 minutes.
  • Finish: Stir in 1 tsp lemon juice (optional) and garnish with chopped coriander leaves.
  • Serve: Serve hot with chutney or pickle.

Tips:

  • You can adjust the consistency by adding more or less water based on how soft or firm you want the upma.
  • Roasting the rava is an important step to avoid clumping when cooking.
  • Adding vegetables makes the upma more nutritious and flavourful.
