Samai Puttu

Here’s how to make Samai Puttu, a healthy and delicious steamed dish made with little millet:
Ingredients:
- Samai (Little Millet): 1 cup
- Grated coconut: 1/2 cup (optional)
- Water: as needed
- Salt: to taste
- Sugar: 1-2 tsp (optional, for a sweet version)
- Cardamom powder: 1/4 tsp (optional, for a sweet version)
- Ghee: for greasing (optional)
Instructions:
- Roast samai: Dry roast 1 cup samai for 2-3 mins, then cool.
- Grind: Grind the roasted samai into coarse flour.
- Prepare mixture: Mix flour with salt, water (moist but not wet), and grated coconut (optional). Add sugar and cardamom for a sweet version.
- Steam: Grease puttu maker, layer mixture and coconut alternately. Steam for 10-15 mins.
- Serve: Serve hot with coconut milk, banana, or curry.
