Varagu Upma Kozhukattai

aragu Upma Kozhukattai is a healthy and savoury steamed dumpling made from Varagu flour (Kodo millet flour) and mixed vegetables, ideal for breakfast or a light meal.
Ingredients:
- 1 cup Varagu flour (Kodo millet flour)
- 1/4 cup finely chopped vegetables (carrot, beans, peas, etc.)
- 1-2 green chilies (chopped)
- 1 tsp mustard seeds
- 1/2 tsp urad dal
- 1/2 tsp chana dal (split chickpeas)
- 1/4 tsp asafoetida (hing)
- 1/4 tsp turmeric powder
- Salt to taste
- 1 tbsp oil
- 1 tbsp grated coconut (optional)
- 1-2 tbsp coriander leaves (for garnish)
- Water as needed (approx. 1 to 1.5 cups)
Instructions:
- Tempering: Heat oil, add mustard seeds, dal, asafoetida, turmeric, and sauté.
- Add Veggies & Water: Add chopped vegetables, green chilies, and sauté. Add water and bring to a boil.
- Cook Flour: Gradually add Varagu flour, stir continuously until thickened (5-7 mins).
- Shape Dumplings: Cool slightly, shape the mixture into small round dumplings.
- Steam: Steam the dumplings for 10-12 minutes.
- Garnish: Garnish with coconut and coriander leaves. Serve hot.
