Kuthiraivali Kheer

Kuthiraivali kheer is a delicious, creamy dessert made using kuthiraivali (barnyard millet) flour, milk, and sugar (or jaggery). It's a nutritious, gluten-free, and comforting sweet dish that can be enjoyed after a meal or during festivals. Here’s the full cooking procedure to make Kuthiraivali Kheer.  
Ingredients                                             

  •  1/2 cup Kuthiraivali flour  
  • 3 cups milk  
  • 1/4 cup sugar (or jaggery)  
  • 1/4 tsp cardamom powder  
  • 2 tbsp ghee  
  • 1/4 cup cashews (optional)  
  • 1/4 cup raisins (optional)  
  • A pinch of saffron strands (optional)                                         

Instructions:

  •  Roast Flour: Heat 1 tbsp ghee in a pan, roast 1/2 cup Kuthiraivali flour for 2-3 minutes until fragrant, and set aside.
  •  Boil Milk: Bring 3 cups milk to a boil in a separate pan. (Add saffron if using.)
  • Add Flour: Gradually add the roasted flour to the boiling milk, stirring constantly to avoid lumps. Cook for 5-8 minutes until thickened.
  • Sweeten & Flavour: Add 1/4 cup sugar (or jaggery), 1/4 tsp cardamom powder. Stir well and cook for 2-3 more minutes.
  • Prepare Nuts: In a small pan, heat 1 tbsp ghee, sauté cashews and raisins until golden and plump.
  • Finish: Add the sautéed nuts to the kheer, stir, and cook for 2 more minutes. Remove from heat.

   Serve: Serve warm or chilled, garnished with extra cashews and raisins.

Tips:

  • Vegan Option: Substitute the milk with coconut or almond milk, and use coconut oil instead of ghee for a completely plant-based dish.  
       
  • Consistency: If the kheer thickens too much while cooling, simply add a little warm milk to loosen it up.  
       
  • Jaggery: Adjust the quantity of jaggery based on your sweetness preference. Be sure to add it once the dish has cooled down slightly to avoid curdling the milk.
