Brown Top Millet Pulao

A healthy and flavourful one-pot dish made with Brown Top Millet (Korralu) and mixed vegetables. It’s perfect for lunch or dinner and can be served with raita or curry.
Ingredients:
- 1 cup Brown Top Millet (washed and soaked for 15-20 minutes)
- 1 tablespoon oil or ghee
- 1 medium onion (sliced)
- 1 teaspoon ginger-garlic paste
- 1-2 green chilies (slit)
- 1/2 cup mixed vegetables (carrot, beans, peas, potato)
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 cinnamon stick
- 2-3 cloves
- 1-2 bay leaves
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1.5 cups water (or vegetable broth for extra flavour)
- Fresh cilantro for garnish
Instructions:
Sauté Spices: Heat oil, add cumin, bay leaves, cinnamon, and cloves. Let splutter.
Sauté Onion & Veggies: Add onions, ginger-garlic paste, chilies. Sauté, then add mixed veggies.
Add Spices & Millet: Add turmeric, coriander, garam masala, and soaked millet. Mix.
Cook: Add water, salt. Pressure cook for 2-3 whistles or cook covered for 10-12 mins.
Garnish & Serve: Fluff the pulao, garnish with cilantro, and serve hot.
Tips:
- You can add other spices like fennel seeds, star anise, or nutmeg for a unique flavour.
- For extra protein, you can add some cooked chickpeas or beans to the pulao.
- If you prefer a spicier dish, you can add red chili powder or garam masala at the end for added flavour.
