Manathakkali Vathal Kuzhambu is a flavourful South Indian dish made using Manathakkali Vathal (sun-dried black nightshade berries) in a tangy and spicy tamarind-based gravy. Here's the step-by-step cooking procedure:

Ingredients:

  • Manathakkali Vathal (sun-dried black nightshade berries) – 2 tbsp
  • Tamarind – 1 small lemon-sized ball
  • Oil – 2 tbsp (preferably sesame oil)
  • Mustard seeds – 1 tsp
  • Fenugreek seeds – 1/2 tsp
  • Curry leaves – 10-12
  • Dry red chilies – 2-3
  • Turmeric powder – 1/4 tsp
  • Sambar powder – 1-1.5 tbsp
  • Asafoetida (hing) – 1/4 tsp
  • Salt – to taste
  • Water – 2-3 cups (adjust for consistency)

Instructions:

  • Soak Tamarind: Soak 1 small lemon-sized tamarind in warm water, extract juice, and set aside.
  • Fry Vathal: Heat 1 tbsp oil, fry 2 tbsp Manathakkali Vathal until puffed, and set aside.
  • Tempering: In the same pan, heat 1 tbsp oil, add 1 tsp mustard seeds, 1/2 tsp fenugreek seeds, 2-3 dry red chilies, and curry leaves. Sauté for 1 minute.
  • Add Spices: Add 1/4 tsp turmeric, 1-1.5 tbsp sambar powder, and 1/4 tsp asafoetida. Stir for a minute.
  • Make Gravy: Add tamarind extract and 2-3 cups water. Bring to a boil.
  • Add Vathal: Add fried Manathakkali Vathal, cook for 10-15 minutes.
  • Final Touch: Add salt and simmer for a few more minutes.
  • Serve: Serve hot with rice.

Tips:

  • Adjust the consistency by adding more or less water based on your preference.
  • You can also add a pinch of jaggery for a slight sweetness to balance the tanginess.
